[Prairie_Beef] Some SERIOUSLY expensive "tallgrass" beef

It is always good to have more information rather than less.  I'm keeping all of this in a file.
 
Specifically about the Tallgrass Beef company, in one of those wild twists of fate, I met Bill Kurtis, while eating at his Prairie Grass restaurant in suburban Chicago.  He's the owner of the company and would be up for a profile in the Prairie Journal.  I could use the opportunity to pick his brain about direct marketing, breeds, forages, etc.  I'm not sure that what they're doing is good for the wildlife, but we'll see.
