I think this site has already been mentioned, but it has a nice summary on
the advantages of grass-fed beef - the "new age" approach to raising
cattle <smile>. This caught my eye since its a Missouri producer's page.

For those tracking the profit potential: this company only offers side
(half a cow) and full orders and charges $495 for a half, and $989 for
full - with the customer additionally paying all processing and packaging
charges. They require a $500 non-refundable deposit. Minimal effort on
their part - nicely higher profit over cattle barn sales.
